Bleu Infernos
Ingredients -
Cooked cubed chicken- 4oz of chicken per person
1 cup Blue Cheese
Bleu cheese dressing
Hot sauce- 2 oz per person
Mushrooms chopped- 2 mushrooms per person
Sub rolls- 1 per person
Directions -
Take the cooked chicken cubes and sautée them with the mushrooms.
After the mushrooms are soft add hot sauce. Let the hot sauce cook until it starts to bubble.
Add the bleu cheese and let melt. Serve on sub rolls with bleu cheese dressing
Chicken Cheese Steaks
Chicken Breasts (sliced thin skinless and boneless) -4oz per person
American cheese -2 slices per person
Sautéed onions - 1 whole spanish onion per 10 people
Sautéed green peppers - 1 green pepper per 5 people
Sub Rolls - 1 per person
Mayonaisse
Directions -
Cook the chicken completely. Cover with onions, peppers and cheese then allow it to melt.
Serve on sub rolls with mayonaisse, if desired.
This is a very simple main dish. Fast prep time and always a hit with your guests.
Baby Muffalettas
Salami - 4 thin slices per person
Italian ham - 4 thin slices per person
Provolone cheese - 2 slices per person
Olive salad - black olives (one 6oz can) and green olives (one 6oz jar) in olive oil with oregano (1 teaspoon) chopped in blender until fine
Bagels-1 per person
Directions -
On the bottom slice of bagel place 2 slices of salami. Top that with
Olive salad and provolone. Add a layer of Italian ham; salami and provolone keep stacking until you are happy with the appearance. Top it off with a second layer of olive salad. Put the top piece of the bagel on and toss in the oven until the cheese melts.

Your choice of club bread
Ham-2 oz per person
Turkey-2 oz per person
Swiss-1 slice per person
Colby-1 slice per person
Bacon-2 slices per person
Lettuce
Tomato
Mayonaisse
Directions -
Toast bread lightly, and cover with mayonaisse and lettuce. Layer turkey, tomato, Swiss cheese, and bacon on one slice of toast.
Layer ham, colby, tomato, and bacon on the other piece. Put the turkey layer over the ham layer, and cover with the third piece of toast.
Place four toothpicks at each corner. Cut in an X shape.
Grilled Chicken
Raw Boneless skinless chicken breasts-4 oz per person
Olive oil -2 cups
Old bay-3 teaspoons
Parsley-1 teaspoon
Fresh Spinach
Ranch Dressing
Honey Mustard Dressing
Tomato
Kaiser roll
Directions -
Marinate the chicken in oil with old bay and parsley for at least an hour. Cook on a grill until thoroughly cooked. Dress the Kaiser roll with the dressings, spinach and tomato.
Serve hot.
